Pancit Noodles with shrimps





I’m starving for noodles pancit last weekend   feel a bit more comfortable to eat Filipino food than the food stack on the fridge. I eat american food feel  like not good all the time to eat the food that I am not used to it. I tel my honey that whenever were done shopping for grocery we have to stop by at Mayport   to buy fish and shrimps. That"s what happen when we got there basically when we get there I see some fresh fish, clumps, Squid and other seafood. I am happy bought some Shrimps and Mussels so happy to cook my Filipino food  my week is not complete without eating my Pinoy food  although when we buy seafood I make sure I freeze the rest of the fish and mussels because if I am starving i well cook again me and my honey would love to eat asian food.  I’m gonna start buying things like giant bags of pancit canton noodles.  And then I’m going to stir fry them with shrimp and veggies.
The thick noodles soak up all the flavor of the sauteed garlic,  Water soy sauce, fish sauce, and that fresh squeeze of calamansi  juice lime Throw some meat,  whatever, in there with the fresh veggies. It was really, really good.
I added cilantro if you want  is not pinoy seasoning it's good though

    Engredients

 
1 lb. raw, tail-off shrimp.
2 tablespoons oil.
3 cloves garlic,  slice of Bell peppers
 carrots slice,   8 ounces dry pancit canton noodle,
3 cups chicken stock. Or  you can put Water 3 cups, if you don't have chicken stock .
2 tablespoons soy sauce, 1 tablespoon fish sauce.
     Calamansi (or lime) juice to taste.
     Sliced green onions for topping.




Instructions
  1. Mince the garlic and onion. Heat 1 tablespoon of oil in a large skillet. Add garlic and onion and stir-fry until soft, about 3 minutes. Add shrimp and cook, stirring frequently, until no longer translucent, about 3-5 minutes. Remove  from heat and set aside.  Peel and grate the carrot. Add another tablespoon of oil into the skillet and stir fry the vegetables until tender-crisp, about 5 minutes. Remove from heat and set aside.
  2. In a large pot, bring the chicken stock, soy sauce, and fish sauce to a boil. Add the pancit noodles and boil until the noodles are soft, about 5 minutes. Add the shrimp and vegetables to the pot and stir to combine.
  3. Add the remaining tablespoon of oil to a large skillet and add the contents of the pot. Stir fry the mixture for about 10 minutes. When most of the liquid has been absorbed, remove from heat and stir in the Calamansi  juice then serve with rice.
